This type of chile pepper was originally grown
and developed by the local natives in and around the town of Jalapa, Veracruz
in Mexico. Through centuries of breeding and now modern hybrid technology, |
this luscious berry has emerged with its exquisitely robust
yet delicate flavors.
Our unique and secret process for creating Mile High Hot Sauce started
in 1990. I began with a half dozen pepper plants in our backyard garden.
This made 30-40 bottles a year.
We were so delighted with the results of this creation that in 1995,
I moved the "farm" to the local airport for more space. I was now in the
best of all worlds. Hanging around and flying some really neat airplanes
and at the same time, growing jalapeño and making the best hot sauce
I ever ate!
My dad (Bill “TURF” Siegel) brought me some of your Mile High Hot Sauce. It is absolutely terrific. I can’t get enough. I put it on just about everything, but it’s especially great on Tacos and BBQ. Thanks, and… it IS ZESTY.

Sauce uses all natural ingredients. Our 30,000 jalapeño
pepper plants are grown on our 5 acre plot of land located on the Goldsboro
Wayne Airport property in Pikeville North Carolina. The soil is tested
by the North Carolina Department of Agriculture insuring the correct balance
of soil nutrients for growing jalapeño peppers.
Mile High Hot Sauce is a vinegar based sauce which allows it to be
stored without having to refrigerate it after opening. Once the additional
ingredients of salt and other secret spices are blended with the peppers
and vinegar, the entire mixture is cooked allowing the natural juices of
the jalapeño to be released thus creating the incredible flavor
of Mile High Hot Sauce. The mixture is then bottled while still hot, sealing
in the flavor and creating an air tight seal.
I have had opportunity through Air Force and other travels, to enjoy
many types of peppers worldwide. Some, in their raw state, are just too
hot for me! But in creating Mile High Hot Sauce, heat was not the objective.
FLAVOR WAS!! Although many types of peppers are very good by themselves
or combined with others, my favorite types are Jalapeño. Not the
hottest or mildest, but the flavor is tops for me, especially when picked
just as they turn red!

We hope you enjoy Mile High Hot Sauce as much as we do bringing it to
you. Remember our label instructions, "Start with a little and work on
up.
It's Zesty" -- M.P. Cooper, LtCol, USAF (Ret.)
P.S. Some say it doesn't make any difference, but I know these peppers
get their flavor centers excited hanging around airplanes.
